Steps to make Christmas cake roll
- 1. Prepare the materials used.
- 2. Mix 10g of matcha powder with 10g of hot milk and cover well for later use.
- 3. Add milk to salad oil and stir evenly until it is emulsified.
- 4. Add sifted low gluten flour and mix evenly using cutting and mixing techniques.
- 5. Divide the evenly mixed egg yolk paste into two portions.
- 6. Add matcha solution and red velvet solution separately, stir evenly, cover and set aside.
- 7. Whip egg whites cream: Add a few drops of lemon juice to the egg whites, use an egg beater to beat until coarse bubbles appear, then add fine sugar in three portions. Whip the egg whites cream until it reaches a neutral foaming state that can pull up large bends.
- 8. Divide the whipped egg white cream into two parts, and mix them evenly with matcha egg yolk paste and red velvet egg yolk paste by flipping.
- 9. Put the prepared red and green batter into two piping bags respectively.
- 10. Place an oilcloth on the square baking tray, cut small openings in the piping bag containing the batter, and squeeze two portions of batter tightly from one corner, one red and one green evenly.
- 11. Preheat the Cass 750 oven to 150 degrees Celsius, then place the baking tray in the middle grill and bake for about 30 minutes.
- 12. After baking, the cake roll should be immediately taken out of the oven and placed on a drying net for a few minutes. Then, cover the surface of the cake roll with oil paper, invert it, tear off the oil cloth, and cover it with a protective cover to prevent it from drying out. Let it cool.
- 13. Prepare filling: Add light cream to fine sugar, drop a few drops of rum, and beat until thick and textured.
- 14. Place oiled paper on the countertop, with the cake roll facing upwards. Cut the end diagonally and apply whipped cake cream,
- 15. Use a rolling pin to press the end of the cake, evenly spread the whipped cream on the cake, add a little more at the beginning, and a thin layer at the end. Finally, use a rolling pin and oiled paper to roll the cake, wrap it, refrigerate and shape it, decorate it appropriately, and then cut it into pieces for consumption.
